What is your recipe for "designer burger" and pairing wine?

Ground kobe beef with blue cheese stuffing, grilled medium rare. Topped with apple wood grilled red sweet bell pepper, 3 slices of white truffle, minced chalet, sea salt and fresh grounded pepper corn. Put all inn between toasted sour dough bum. Pairing wine: Pinot Noir.
